I’ve been on a taco kick lately and thought, what better post for Tuesday than a Taco Tuesday post. I present you with BBQ chicken tacos! These tacos are a simple, tasty meal that everyone will enjoy.
All you will need for these BBQ chicken tacos are chicken breast, bacon, flour tortillas, lettuce, shredded cheese, BBQ sauce, and pico de gallo. You can also use a seasoning for your chicken like salt and pepper, or Cajun, which is what I used.
Prepping and making the meat
Start by heating up your skillet and add your bacon. While the bacon is cooking, season your chicken. As I mentioned above, you can season the chicken in a number of ways. I went the Cajun route as I was going for a little spice with this dish.
Once the bacon is finished cooking, remove the bacon, leaving the bacon grease in the pan. Add your chicken to the hot pan with bacon grease and cook your chicken until it is done. Depending on the thickness, roughly 4 to 5 minutes per side.
After your chicken is cooked, add it to the same plate with the bacon. Cut both the chicken and the bacon so they will fit nicely into a small taco shell. After it is cut, put the chicken and bacon into your hot pan for a minute or two, letting everything heat back up. Remove the meat and place it back on your plate.
Making the taco
Heat up or toast your tortilla to your liking. I don’t like mine crispy so I just do a quick heat with no butter or oil, about 45 seconds per side.
Once your shells are cooked to your liking, it is time to start building your tacos. Simply add your chicken and bacon mix to the shell topping with cheese. Then you will want to add your BBQ sauce, lettuce and pico de gallo.
BBQ Chicken Tacos
- 12 oz Boneless Skinless chicken breast Roughly 2 large breasts
- 6 strips Bacon
- 6 Flour tortillas
- 1 cup shredded lettuce
- 1/2 cup Shredded cheese you can pick whatever kind you want
- 1/2 cup Pico de gallo
- 1/2 cup BBQ sauce
- 1 tbsp Seasoning I used Cajun, but salt & pepper works just fine
In a large skillet cook your bacon. While your bacon is cooking season your chicken. I used Cajun seasoning, but you can use salt & pepper, or whatever seasoning you'd like.
When the bacon is finished cooking, remove the bacon, leaving the bacon grease in the pan. Add your chicken and cook your chicken until done.
Remove the chicken and place with the bacon. Chop the chicken into small cubes and chop the bacon small as well. Mix the bacon and the chicken together on a plate.
Toast your flour tortilla to your liking.
Remove the tortilla's and fill them with the chicken and bacon mix. Top with cheese, then BBQ sauce, lettuce, and pico.
Serve and enjoy!
