Lightly breaded chicken with a baked potato is a personal favorite dish of mine and something I created to change up the regular old chicken. It is simple and delicious and is flexible for you to do really anything you’d like. I feel like I tweak the recipe all the time but this is one I’ve used multiple times and it is really good.
All you need for this simple meal is 1 chicken breast, flour (I prefer whole wheat flour), Cajun seasoning, cayenne seasoning, a baked potato and garnishes for your potato.
I start with the potato because it takes the longest to actually cook (and takes a long time to cool off). I microwave my potatoes to save a TON of time. I puncture the potato a few times and pop it in the microwave for 5 minutes. After 5 minutes I rotate it and zap it for another 5 minutes or until soft. It all depends on the size of your potato but 5 and 5 always works for me.
Once I get the potato in the microwave I heat up my nonstick skillet with coconut oil and start to make the breading for the chicken. For the breading, I mix the flour, Cajun, and cayenne in a gallon Ziploc bag. I like to keep some air in the bag because it makes it easy to shake and mix everything together. Once it is shaken to your liking just add the raw chicken. Shake the bag some more completely coating the chicken with the flour mix.
Once the chicken is completely coated, add it to your now heated nonstick skillet with the coconut oil. Cook the chicken until golden brown (about 4 minutes per side depending on thickness).
Once your chicken is done you are ready to plate and serve with your cooked potato. Top the potato with sour cream, bacon bits or whatever else your savory heart may desire and ENJOY! The recipe below is for 1 serving. Just double the seasonings if you add more chicken and I recommend cooking the potatoes separately not together if you need more than one.
Lightly Breaded Chicken with Baked Potato
- 1 Boneless skinless chicken breast
- 1 tbsp Coconut oil or olive oil
- 1/4 cup Flour
- 2 tbsp Cajun seasoning
- 1 tbsp Crushed cayenne pepper
- 1 Baked potato
- 1 tbsp Sour cream optional
- 1 tbsp Bacon bits optional
In a gallon Ziploc bag combine flour, Cajun seasoning, and cayenne pepper. Zip bag and shake to mix together.
Place raw boneless skinless chicken breast in the Ziploc bag and coat chicken completely.
In a non-stick skillet, heat up the coconut oil.
Place the seasoned chicken breast in the skillet and cook until done. Cooking time varies based on chicken breast size and thickness.
Clean the potato and poke several times with a fork.
Place potato in the microwave and cook on high for 5 minutes. Rotate the potato after 5 minutes and cook for an additional 5 minutes or until potato is soft.
Cut potato in half and serve with sour cream and bacon bits.
