    Place the Parmesan in the mixing bowl, grate 10 sec/speed 10, and transfer to a small bowl.

    Place the flour, eggs, 10 g olive oil, and 2 g salt in the mixing bowl. Mix 15 sec/speed 5, then knead 2 min/dough mode. Turn out, press into a smooth disc, wrap, and rest at room temperature for 30 minutes.

    Place the garlic in the mixing bowl and chop 3 sec/speed 7. Add the mushrooms and chop 4 sec/speed 5.

    Add the remaining 15 g olive oil, 2 g salt, and 1 g black pepper. Sauté 8 min/120°C/reverse/speed 1 without the measuring cup, with the simmering basket on the lid to catch splashes.

    Add the spinach and cook 2 min/100°C/reverse/speed 1. Transfer to a wide plate and cool for 10 minutes.

    Return the cooled mushroom mixture to the mixing bowl. Add the ricotta, 50 g grated Parmesan, and lemon zest, then mix 10 sec/reverse/speed 3. Transfer the filling to a piping bag and clean and dry the bowl.

    Divide the pasta dough into 4 pieces. Keep unused dough covered and roll each piece through a pasta machine to a thin sheet, dusting sparingly with flour.

    Pipe teaspoon-sized mounds of filling 4 cm apart over half of each sheet. Brush the exposed pasta lightly with water, fold over, press out all trapped air, seal firmly, and cut into individual ravioli. Arrange on a floured tray without overlapping.

    Bring a large pot of well-salted water to a gentle boil. Meanwhile, place the butter and sage in the clean mixing bowl and cook 5 min/120°C/reverse/spoon speed without the measuring cup.

    Add the cream, lemon juice, remaining 4 g salt, and remaining 1 g black pepper. Set the simmering basket on the lid and cook 5 min/90°C/reverse/speed 1, then stir in the remaining 30 g grated Parmesan for 20 sec/reverse/speed 2.

    Cook the ravioli in batches for 3 to 4 minutes, until the pasta is tender and the centers are piping hot. Lift out with a slotted spoon and divide among warm bowls.
