Place the water and 4 g salt in the mixing bowl. Insert the simmering basket, add the potatoes, fit the lid and measuring cup, and steam 10 min/Varoma/speed 1.

Lightly grease the Varoma dish. Season the salmon with 2 g salt and half the black pepper, top each fillet with a lemon slice, and arrange the fillets in the dish with steam slots left open.

Remove the measuring cup, position the covered Varoma, and steam 12 min/Varoma/speed 1.

Carefully open the Varoma lid away from you. Arrange the peas on the Varoma tray, insert the tray above the salmon, cover, and steam 5 min/Varoma/speed 1.

Check that the salmon reaches 63°C at its thickest point and that the potatoes are tender; steam 2 to 4 minutes longer if needed. Set the covered salmon aside and transfer the potatoes to a warm bowl.

Reserve 200 g of the cooking liquid and empty the mixing bowl. Place the garlic and 10 g dill in the bowl and chop 3 sec/speed 7, then scrape down.

Add 200 g steamed peas, the reserved cooking liquid, Greek yogurt, lemon zest and juice, olive oil, remaining 2 g salt, and remaining black pepper. Blend 45 sec, increasing gradually from speed 5 to speed 9.

Toss the potatoes with the remaining peas and 5 g dill. Spoon the pea velouté onto four plates and top with the potatoes and salmon.
