    Heat half of the olive oil in a large pot over medium-high heat. Add the mushrooms and cook for 7 to 9 minutes until well browned.

    Transfer half of the browned mushrooms to a plate for topping, leaving the rest in the pot.

    Add the remaining olive oil and the leek to the pot and cook for 4 minutes until softened. Stir in the garlic and thyme and cook for 1 minute.

    Add the barley, vegetable broth, salt, and black pepper. Bring to a boil, then reduce the heat, cover, and simmer for 30 to 35 minutes until the barley is tender, stirring twice during cooking.
