Heat half of the sesame oil in a wide lidded pot over medium-high heat. Add the tofu and cook for 7 to 8 minutes, turning occasionally, until golden.

Transfer the tofu to a plate. Add the remaining sesame oil and the mushrooms to the same pot and cook for 4 minutes until browned.

Stir in the ginger and garlic and cook for 30 seconds, then add the quinoa, vegetable broth, and sliced bok choy stems.

Bring to a boil, reduce the heat, cover, and simmer for 15 minutes until the quinoa is tender.
